Instructions:
Step 1: Heat oil in a skillet over medium-high heat. Add the sliced onion and bell pepper. Cook until softened, about 5 minutes. Remove from skillet and set aside.
Step 2: In the same skillet, season steak slices with salt, pepper, and onion powder. Cook for 3-4 minutes until browned and cooked to desired doneness. Remove from heat.
Step 3: Wipe the skillet clean and place it over medium heat. Lay one tortilla flat in the skillet.
Step 4: Sprinkle a layer of cheese on one half of the tortilla, then top with cooked steak, peppers, onions, and a little more cheese. Fold over.
Step 5: Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
Step 6: Remove from skillet, slice into wedges, and garnish with cilantro or green onions if desired.
Storage Information:
Best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet or oven for optimal crispiness.
