step 1 Preheat your oven to 400°F (200°C). Scrub the potatoes clean, pat them dry, and rub each one with olive oil, salt, and black pepper. Place them directly on the oven rack and bake for 50–60 minutes, or until fork tender./n
step 2 While the potatoes are baking, season the steak cubes with smoked paprika, onion powder, dried thyme, salt, and pepper./n
step 3 Heat a large skillet over medium-high heat and add butter. Once melted, add the steak cubes in a single layer and sear for 2–3 minutes per side until browned and cooked to your preferred doneness. Add minced garlic during the last minute of cooking and stir to combine. Remove from heat and set aside./n
step 4 When the potatoes are done, remove them from the oven and let them cool slightly. Slice each potato lengthwise and gently fluff the insides with a fork.
