Ingredients:
For the steamed bread (ujjeqe):
3 cups cake flour
1 packet (10g) instant dry yeast
2 tablespoons sugar
1/2 teaspoon salt
1 1/2 cups warm water
For the spinach and potato mash:
2 cups fresh spinach, chopped
2 medium potatoes, peeled and cubed
1 tablespoon butter
Salt and pepper to taste
For the oxtail stew:
2 lbs (about 1 kg) oxtail pieces
2 tablespoons oil
1 onion, chopped
2 garlic cloves, minced
1 tablespoon tomato paste
2 large tomatoes, chopped (or 1 cup canned tomatoes)
1 tablespoon Worcestershire sauce
1 beef stock cube
2 cups water or beef broth
1 teaspoon paprika
Salt and pepper to taste
Optional: 1 cup cooked butter beans
