Instructions
Step 1: Preheat your oven to 400°F. Line a baking sheet with foil for easy cleanup.
Step 2: Pat the chicken drumsticks dry with paper towels. In a small bowl, combine smoked paprika, garlic powder, salt, and black pepper.
Step 3: Rub each drumstick with olive oil, then coat generously with the spice mixture.
Step 4: Arrange drumsticks on the prepared baking sheet and bake for 25 minutes.
Step 5: Remove from oven, brush generously with BBQ sauce, and return to bake for another 15-20 minutes until caramelized and cooked through.
Step 6: For the fries, toss cut potatoes with 2 tbsp olive oil, paprika, garlic powder, salt, and pepper. Spread on a separate baking sheet and bake at 400°F for 25-30 minutes until golden and crispy, stirring halfway through.
Step 7: For the slaw, combine shredded cabbage and carrots in a bowl. Whisk together mayo, apple cider vinegar, sugar, salt, and pepper, then toss with the vegetables until well coated.
Step 8: Plate everything together: drumsticks, fries, and fresh slaw. Serve hot and enjoy.
Storage and Reheating Tips
Store leftover drumsticks in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 325°F oven for 10-15 minutes to restore the glaze without drying out the meat.
The slaw is best enjoyed fresh but keeps for 1-2 days refrigerated. Fries are crispiest eaten immediately, though leftovers can be reheated in a 375°F oven for about 10 minutes.
For meal prep, season and cook the drumsticks a day ahead. Simply reheat before serving with freshly made fries and slaw for a quick dinner.
