Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with foil for easy cleanup.
Step 2: Pat the chicken drumsticks dry with paper towels, then season generously with salt, pepper, paprika, and garlic powder on all sides.
Step 3: Place drumsticks on the prepared baking sheet and bake for 20 minutes until partially cooked.
Step 4: While the chicken cooks, toss the cut potatoes with 1/2 tbsp olive oil, salt, pepper, and paprika, then spread on a separate baking sheet.
Step 5: Add the potatoes to the oven alongside the chicken and bake for 15-20 minutes until golden and crispy, stirring halfway through.
Step 6: Brush the chicken drumsticks generously with BBQ sauce and return to the oven for 5-7 minutes until the glaze is sticky and caramelized.
Step 7: For the slaw, combine shredded cabbage and carrot in a bowl, then dress with mayonnaise, apple cider vinegar, and a pinch of salt and pepper.
Step 8: Plate everything together, serving the sticky drumsticks alongside crispy fries and fresh slaw for a complete, satisfying meal.
Storage and Reheating Tips
Store leftover chicken and fries in separate airtight containers in the refrigerator for up to 3 days. The slaw is best enjoyed fresh but keeps for 1-2 days if stored separately.
To reheat chicken, place it on a baking sheet at 350°F for about 10 minutes until warmed through and the glaze re-caramelizes slightly. For fries, use an air fryer or oven at 375°F for 5-8 minutes to restore crispness.
You can also prep the slaw ingredients ahead of time and dress it just before serving for maximum freshness.
