Instructions
Step 1: Preheat your oven to 400°F. Pat the chicken drumsticks dry with paper towels and season generously with salt, black pepper, and paprika.
Step 2: Place the drumsticks on a baking sheet lined with foil. Brush with olive oil and roast for 20 minutes until the chicken begins to cook through.
Step 3: While the chicken roasts, cut your potatoes into fries and toss with a pinch of salt and paprika. Spread on a separate baking sheet and place in the oven alongside the chicken for the final 15-18 minutes until golden and crispy.
Step 4: In a small bowl, whisk together the mayonnaise, shredded cabbage, shredded carrot, and apple cider vinegar. Season with salt and pepper, then set aside to let the flavors meld.
Step 5: Remove the chicken from the oven after 20 minutes. Brush generously with BBQ sauce, coating all sides. Return to the oven for another 15-20 minutes, basting with additional sauce halfway through until the glaze is sticky and caramelized.
Step 6: Plate your finished dish by arranging the sticky BBQ chicken, crispy fries, and fresh slaw together. Serve immediately while everything is at its best.
Storage and Reheating Tips
Store leftover chicken and fries in separate airtight containers in the refrigerator for up to 3 days. The slaw is best enjoyed fresh but will keep for 2 days if stored separately.
To reheat, place the chicken on a baking sheet and warm in a 350°F oven for about 10 minutes until heated through. Reheat fries in a 400°F oven for 5-7 minutes to restore their crispiness.
For best results, keep the slaw fresh by storing it without dressing and adding the mayo mixture just before serving.
