Sticky BBQ Chicken with Crispy Fries & Fresh Slaw

Instructions

Step 1: Preheat your oven to 400°F (200°C). Pat the chicken pieces dry with paper towels to help them brown.

Step 2: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat. Season the chicken with smoked paprika, garlic powder, salt, and black pepper.

Step 3: Sear the chicken for 3-4 minutes per side until golden brown. In a small bowl, mix together the BBQ sauce and honey.

Step 4: Brush the BBQ mixture generously over the seared chicken pieces. Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through and the glaze is sticky and caramelized.

Step 5: While the chicken bakes, prepare the fries. Toss cut potatoes with 1 tbsp olive oil, paprika, and salt. Spread on a baking sheet and bake for 25-30 minutes, stirring halfway through, until crispy and golden.

Step 6: Make the slaw by combining shredded cabbage and carrot in a bowl. Dress with 1 tbsp olive oil, vinegar or lemon juice, and a pinch of salt and pepper. Toss well and set aside.

Step 7: Plate the sticky BBQ chicken with crispy fries and fresh slaw on the side. Serve warm and enjoy.

Storage and Reheating Tips

Leftover chicken keeps well in the refrigerator for up to 3 days in an airtight container. Reheat gently in a 350°F oven for about 10 minutes to avoid drying it out.

The fries are best enjoyed fresh, but can be stored separately and crisped up in a 400°F oven for 5 minutes. The slaw will keep for 1-2 days but is most refreshing when served fresh.

You can also freeze the cooked chicken for up to 2 months. Thaw overnight in the refrigerator before reheating.
