Instructions:
step 1 Rinse rice under cold water. Add to a pot with 2 cups water and salt. Bring to a boil, then cover and reduce heat to low. Simmer for 15 minutes, then remove from heat and let rest, covered, for 5 minutes.
step 2 Steam broccoli florets in a steamer basket or microwave with a splash of water until bright green and tender-crisp, about 4-5 minutes.
step 3 Season chicken pieces with salt and pepper, then toss in cornstarch to coat evenly.
step 4 Heat oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 4-5 minutes per side until golden and cooked through. Remove and set aside.
step 5 In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Stir in soy sauce, brown sugar, honey, and rice vinegar. Bring to a simmer.
step 6 Add cornstarch slurry and stir until sauce thickens to a sticky consistency, about 2-3 minutes. Add red pepper flakes if using.
step 7 Return cooked chicken to the pan and toss to coat with the sauce.
step 8 Serve the sticky garlic chicken over jasmine rice with steamed broccoli. Garnish with chopped scallions if desired.
Storage and Reheating Tips:
Store leftovers in airtight containers in the fridge for up to 3 days. Reheat in the microwave or on the stovetop over low heat. Add a splash of water to the chicken if the sauce has thickened too much.
