Instructions:
step 1 Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken, season with a little salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
step 2 In the same skillet, add remaining oil and minced garlic. Sauté for 30 seconds until fragrant.
step 3 Stir in soy sauce, honey, brown sugar, and rice vinegar. Bring to a simmer.
step 4 Add cornstarch slurry and stir until the sauce thickens.
step 5 Return cooked chicken to the skillet and toss to coat evenly in the sticky sauce. Simmer for 2-3 minutes.
step 6 In a separate pan, add broccoli with 1 tablespoon water and cover. Steam on medium heat for 3-5 minutes until bright green and just tender.
step 7 Serve chicken over cooked rice with steamed broccoli on the side. Garnish with sesame seeds or green onions if desired.
Storage and Reheating Tips:
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat chicken and rice in a skillet or microwave. Add a splash of water if needed to loosen the sauce. Steam or microwave broccoli until warmed through.
