Step 1: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
Step 2: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Step 3: Add the melted butter, egg, and vanilla extract. Mix until a crumbly dough forms.
Step 4: Press about two-thirds of the dough evenly into the bottom of the prepared baking pan.
Step 5: In a small bowl, stir together the strawberry jam, cornstarch, and lemon juice.
Step 6: Spread the strawberry filling evenly over the crust.
Step 7: Sprinkle the remaining crumb mixture over the strawberry layer.
Step 8: Bake for 35 to 40 minutes or until the top is lightly golden.
Step 9: Allow the bars to cool completely before slicing into squares.
Step 10: Dust with powdered sugar if desired before serving.
Storage and Reheating Tips
Store the bars in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
To freeze, wrap the bars individually and store them in a freezer-safe container for up to 2 months.
Thaw frozen bars at room temperature before serving.
