Instructions
Step 1: In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth and creamy.
Step 2: Fold in whipped topping until fully combined.
Step 3: Carefully unroll the sponge cake and spread the cheesecake mixture evenly over the surface.
Step 4: Layer with sliced strawberries.
Step 5: Gently roll the cake back up, using parchment paper to help keep its shape. Wrap and chill for at least 2 hours.
Step 6: Before serving, top with more whipped cream, crushed cookies, and fresh strawberries.
Storage Information
Store the cheesecake roll in the refrigerator, wrapped in plastic or in an airtight container, for up to 3 days. Best served chilled. Not suitable for freezing as the texture of the strawberries and whipped filling may be affected.
