Instructions
Step 1: In a bowl, toss sliced strawberries with sugar and lemon juice. Let sit for 10-15 minutes until juicy.
Step 2: In a mixing bowl, beat cream cheese until smooth. In another bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Fold whipped cream into cream cheese until smooth.
Step 3: In a trifle bowl or clear glass dish, layer cake cubes at the bottom. Top with a layer of strawberries (and a little juice or jam), then spread a layer of the cream mixture.
Step 4: Repeat the layers until the bowl is full, finishing with cream and a generous crown of whipped topping.
Step 5: Garnish with whole strawberries, crushed cookies, and fresh mint.
Storage Information
Best served fresh or chilled for up to 1 day. Store covered in the refrigerator. Cake may soften over time due to strawberry juices, so assemble just before serving for best presentation.
