Step 1: Line a baking tray or plate with parchment paper.
Step 2: In a medium bowl, combine the diced strawberries, vanilla Greek yogurt, honey, and vanilla extract.
Step 3: Stir gently until the strawberries are evenly coated.
Step 4: Scoop small mounds of the yogurt mixture onto the prepared parchment-lined tray.
Step 5: Freeze the clusters for 1 to 2 hours until firm.
Step 6: In a microwave-safe bowl, melt the milk chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.
Step 7: Remove the frozen yogurt clusters from the freezer.
Step 8: Dip or spoon the melted chocolate over each frozen cluster until completely coated.
Step 9: Return the chocolate-covered clusters to the parchment-lined tray.
Step 10: Freeze again for 10 to 15 minutes until the chocolate shell is fully set.
Step 11: Serve immediately or store frozen until ready to enjoy.
Storage and Reheating Tips
Store Strawberry Yogurt Chocolate Clusters in an airtight container in the freezer for up to 2 weeks. Keep the clusters frozen until serving, as the yogurt center softens quickly at room temperature. These frozen treats do not require reheating.
