step 1 Heat a frying pan over medium heat and cook the streaky bacon until crispy. Set aside on a paper towel to drain excess fat.
step 2 In the same pan, add butter or a little oil if needed and fry the eggs to your liking (sunny-side-up or over easy for runny yolk). Season with salt and pepper.
step 3 Toast the bread slices until golden and crisp.
step 4 Assemble the sandwich: place one fried egg on a slice of toast, top with crispy bacon, add sauce if using, then sandwich with another slice of toast. Repeat for the second sandwich.
step 5 Slice in half and serve immediately.
Storage and Reheating Tips
This sandwich is best served fresh, but you can cook the bacon in advance and store it in the fridge for up to 3 days. Reheat the bacon in a pan or microwave before assembling. Avoid storing with eggs and toast assembled to maintain texture.
