Summer Sausage and Veggies Skillet

Instructions

Step 1: Heat a large skillet over medium-high heat. Add the smoked sausage slices and cook until browned on both sides, about 5–6 minutes. Transfer to a plate and set aside.

Step 2: In the same skillet, add olive oil and sauté the garlic for 30 seconds until fragrant.

Step 3: Add the zucchini and red bell pepper. Cook for 5–6 minutes until just tender.

Step 4: Stir in the corn, paprika, salt, and pepper. Cook for another 3–4 minutes until everything is heated through.

Step 5: Return the sausage to the skillet and toss to combine. Cook for another 2 minutes, just until warmed through.

Step 6: Garnish with chopped fresh parsley or cilantro and serve hot.

Storage Information

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat or in the microwave until warmed through.
