Instructions

Step 1: In a medium bowl, whisk together the flour, baking powder, and salt.

Step 2: In a large mixing bowl, beat the butter and sugar together until light and fluffy.

Step 3: Add the egg, vanilla extract, and almond extract, and mix until fully combined.

Step 4: Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

Step 5: Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Step 6: Preheat the oven to 350°F and line baking sheets with parchment paper.

Step 7: Roll out the dough on a lightly floured surface and cut into round cookie shapes.

Step 8: Place the cookies on the prepared baking sheets and bake for 8 to 10 minutes until the edges are lightly golden.

Step 9: Allow the cookies to cool completely before decorating.

Step 10: Mix the powdered sugar and milk to create a smooth icing. Tint part of the icing yellow for the sun centers.

Step 11: Spread white icing over the cookies and allow it to set slightly.

Step 12: Pipe yellow circles and sun rays onto each cookie, then add smiling faces and rosy cheeks using decorating gel and edible blush dust.

Step 13: Let the icing fully harden before serving or storing.

Storage and Reheating Tips

Store Sunny Day Sugar Cookies in an airtight container at room temperature for up to 5 days.

For longer storage, freeze the undecorated cookies for up to 2 months. Thaw completely before decorating and serving.
