Instructions
Step 1: In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, olive oil, and ginger. Season chicken breasts with salt and pepper, then marinate in the mixture for at least 30 minutes.
Step 2: Preheat a grill pan or skillet over medium heat. Cook the chicken for 5-7 minutes per side until golden brown and cooked through.
Step 3: While the chicken cooks, prepare the rice and heat the pineapple chunks slightly in a separate pan or microwave.
Step 4: Serve the cooked chicken over a bed of white rice. Top with warm pineapple chunks.
Step 5: Drizzle any leftover marinade (boiled for safety) or fresh sauce over the top. Garnish with chopped green onions.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop. Not recommended for freezing due to the texture change of pineapple.
