Instructions:
step 1: Preheat oven to 400°F (200°C). Scrub potatoes clean, dry them, and rub lightly with olive oil. Pierce each with a fork.
step 2: Place the potatoes on a baking sheet and bake for 45-60 minutes, or until fork tender.
step 3: While the potatoes are baking, cook the ground beef in a skillet over medium heat until fully browned. Drain excess fat.
step 4: Add taco seasoning and 1/2 cup water to the skillet. Simmer for 5 minutes until the sauce thickens.
step 5: Once potatoes are done, let them cool slightly, then slice them open lengthwise and fluff the insides with a fork.
step 6: Top each potato generously with the taco meat mixture.
step 7: Sprinkle with shredded cheese, then add diced tomatoes, a dollop of sour cream, and chopped cilantro.
step 8: Serve immediately and enjoy!
Storage and Reheating Tips:
Store leftovers in airtight containers in the refrigerator for up to 3 days. For best results, store toppings and meat separately from potatoes. Reheat potatoes and meat in the microwave or oven, and assemble toppings just before serving to maintain freshness and texture.
