Step 1: In a large skillet over medium heat, cook the sausage until browned and crumbled. Drain excess grease if needed.
Step 2: Add diced onion and cook for 2-3 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.
Step 3: Pour in chicken broth and heavy cream. Bring to a simmer.
Step 4: Add the tortellini to the skillet and cook for 5-7 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
Step 5: Stir in baby spinach and Parmesan cheese. Cook for 1-2 minutes until the spinach is wilted and the cheese is melted.
Step 6: Season with red pepper flakes (if using), salt, and black pepper to taste. Serve hot.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of cream or broth if needed to loosen the sauce.
