Instructions
Step 1: In a bowl, mix the graham cracker crumbs with melted butter until combined. Press the mixture firmly into the bottom of a 9×13-inch pan to create the crust. Chill in the fridge for 15 minutes.
Step 2: In another bowl, beat the cream cheese and powdered sugar until smooth. Fold in the whipped cream gently.
Step 3: Spread the cream cheese mixture evenly over the chilled crust.
Step 4: Arrange sliced strawberries and pineapple chunks on top of the cream layer.
Step 5: Pour the slightly set strawberry gelatin over the fruit layer, spreading evenly. Chill in the fridge for at least 4 hours or until fully set.
Step 6: Before serving, sprinkle shredded coconut on top for a tropical finish. Slice and enjoy!
Storage Information
Store leftovers covered in the refrigerator for up to 3 days. For best texture, avoid freezing as the gelatin and cream layers may become watery when thawed.
