Instructions

step 1 Season the salmon fillets with salt and pepper on both sides.
step 2 Heat olive oil in a large skillet over medium-high heat.
step 3 Add the salmon fillets, skin-side down if using, and sear for about 4-5 minutes per side, or until golden and cooked through. Remove and set aside.
step 4 In the same skillet, melt the butter and add the chopped onion. Sauté for 2-3 minutes until translucent.
step 5 Add the minced garlic and sun-dried tomatoes and cook for another minute.
step 6 Pour in the heavy cream and stir in the parmesan cheese and Italian herbs. Simmer for 2-3 minutes until the sauce slightly thickens.
step 7 Add the spinach and cook until wilted.
step 8 Return the salmon fillets to the skillet and spoon the sauce over them.
step 9 Simmer for another 2-3 minutes to warm through.
step 10 Garnish with fresh parsley or chives before serving.

Storage and Reheating Tips

Store leftover Tuscan salmon in an airtight container in the refrigerator for up to 2 days. To reheat, place the salmon in a skillet over low heat and warm gently to preserve the creamy texture. You can also microwave it in short intervals, stirring the sauce between heating to avoid separation.
