Instructions:

step 2 In a large bowl, combine olive oil, garlic powder, onion powder, thyme, paprika, lemon juice, salt, and pepper.
step 3 Add the drumsticks and chopped vegetables to the bowl and toss until everything is well coated.
step 4 Transfer the chicken and vegetables to a large baking dish or sheet pan, spreading them out evenly.
step 5 Bake uncovered for 40-45 minutes, or until the chicken is fully cooked and golden brown and the vegetables are tender.
step 6 Garnish with additional fresh parsley before serving.
Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for about 10-15 minutes until warmed through. Avoid microwaving too long to preserve the texture of the chicken and vegetables.
