Instructions

Step 1. Preheat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, stirring halfway through.

Step 2. Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.

Step 3. Cook the sausage according to package directions until browned and fully cooked.

Step 4. For the pancakes, whisk together the flour, baking powder, sugar, and salt in a bowl.

Step 5. In another bowl, whisk together the milk, egg, melted butter, and vanilla. Combine with the dry ingredients and mix until just incorporated.

Step 11. Arrange the pancakes, French toast, bacon, sausage, potatoes, scrambled eggs, and omelet on a large serving platter.

Step 12. Top the pancakes with butter and maple syrup and serve immediately.

Storage and Reheating Tips

Store leftovers in separate airtight containers in the refrigerator for up to 3 days.

Reheat pancakes, French toast, bacon, sausage, and potatoes in a 350°F (175°C) oven or air fryer until warmed through.

Reheat eggs gently in the microwave at reduced power to prevent them from becoming rubbery.

Pancakes and French toast can be frozen for up to 2 months. Thaw overnight in the refrigerator and reheat before serving.
