step 1 Preheat oven to 400°F (200°C).
step 2 In a large bowl, combine chicken drumsticks, potatoes, bell peppers, onion, garlic, olive oil, paprika, oregano, thyme, parsley, salt, and pepper. Toss until everything is well coated.
step 3 Transfer the mixture to a large greased baking dish or sheet pan, arranging in a single layer.
step 4 Bake uncovered for 45–50 minutes, flipping chicken and stirring potatoes halfway through, until the chicken is fully cooked (internal temp 165°F) and potatoes are golden and tender.
step 5 Optional: Squeeze lemon juice over everything before serving for a bright finish.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F until warmed through, or microwave in short intervals. To retain crispness, reheat potatoes separately in a skillet or air fryer.
