Instructions:
step 1 Preheat oven to 400°F (200°C).
step 2 In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, oregano, chili flakes, salt, and pepper.
step 3 Add chicken drumsticks to the bowl and toss to coat well. Set aside to marinate while prepping the vegetables.
step 4 In a large baking dish, layer the potatoes, bell peppers, and onion. Drizzle with a bit of olive oil and season lightly with salt and pepper.
step 5 Place the seasoned drumsticks on top of the vegetables in the baking dish.
step 6 Pour the chicken broth into the dish around the edges to keep everything moist during baking.
step 7 Cover with foil and bake for 35 minutes.
step 8 Remove foil and continue baking uncovered for another 25–30 minutes, or until chicken is golden brown and fully cooked, and potatoes are tender.
step 9 Garnish with chopped parsley and serve hot.
Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 15–20 minutes or microwave in short intervals until warmed through. Add a splash of broth if needed to keep it moist.
