Instructions
Step 1: If not already prepared, roast your chicken leg at 400°F for about 35-40 minutes until golden and cooked through, then set aside to rest.
Step 2: Boil the baby potatoes in salted water for 12-15 minutes until tender, then drain and toss with half the olive oil, salt, and pepper.
Step 3: Steam or blanch the broccoli florets and carrot sticks for 3-4 minutes until crisp-tender, then drizzle with the remaining olive oil.
Step 4: Arrange all components on a large plate, starting with the potatoes, then add the chicken leg, vegetables, and halved boiled eggs around the plate.
Step 5: Sprinkle with salt, black pepper, and optional paprika or chili flakes for extra flavor and serve immediately.
Storage and Reheating Tips
Store each component separately in airtight containers in the refrigerator for up to 4 days. This keeps everything fresh and prevents the vegetables from getting soggy.
To reheat, warm the chicken and potatoes in the oven at 350°F for about 10 minutes, then assemble with fresh or lightly warmed vegetables and eggs.
For a quick cold version, simply chill all components and serve as a protein-packed salad bowl with your favorite dressing.
