Ultimate Protein Power Plate with Roasted Chicken & Veggies

Instructions

Step 1: Preheat your oven to 400°F. Season the chicken leg quarter generously with garlic powder, paprika, salt, and pepper on all sides.

Step 2: Toss the halved baby potatoes with olive oil, salt, and pepper. Arrange them on a baking sheet alongside the chicken.

Step 3: Roast for 35-40 minutes until the chicken skin is golden and crispy and the potatoes are tender and golden brown.

Step 4: While the chicken and potatoes cook, steam the broccoli florets for 5-7 minutes until tender-crisp. Keep them bright green and slightly firm.

Step 5: Bring a pot of water to boil and carefully add the eggs. Boil for 6-7 minutes for soft-boiled eggs with runny yolks, then transfer to ice water and peel gently.

Step 6: Lightly warm the corn kernels and shredded carrots in a pan, or serve them fresh. Season with salt and pepper.

Step 7: Arrange all components on a large plate. Place the roasted chicken leg quarter on one side, then add small piles of potatoes, broccoli, corn, carrots, and the halved eggs around it.

Step 8: Garnish with extra black pepper, smoked paprika, or chili flakes if desired. Serve immediately while everything is warm.

Storage and Reheating Tips

Store each component separately in airtight containers in the refrigerator for up to 4 days. This prevents the vegetables from becoming soggy and keeps everything fresh longer.

To reheat, warm the chicken and potatoes in a 350°F oven for 10 minutes until heated through. Microwave the vegetables separately for 1-2 minutes to maintain their texture and color.

This plate is also delicious served cold as a hearty salad bowl. Simply chop everything into bite-sized pieces and drizzle with your favorite dressing.
