Instructions:
Step 1: In a skillet over medium heat, add olive oil. Once hot, add the shrimp and season with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove from heat and set aside.

Step 2: In a small bowl, mix melted butter and minced garlic. Brush one side of each bread slice with the garlic butter mixture.

Step 3: Place two slices of bread, buttered side down, on a skillet over medium-low heat. Add a mix of mozzarella and cheddar cheese, then evenly distribute the cooked shrimp on top. Add more cheese and top with the remaining bread slices, buttered side up.

Step 4: Cook for about 3-4 minutes per side or until the bread is golden brown and the cheese is melted. Press slightly with a spatula for even browning.

Step 5: Remove from skillet, slice in half, and garnish with parsley if desired.

Storage Information:
