Instructions
Step 1: Pat your chicken legs dry and season generously with salt, black pepper, and paprika on all sides.
Step 2: Heat olive oil in a large skillet over medium-high heat, then place chicken legs skin-side down and sear for 5-7 minutes until golden brown.
Step 3: Flip the chicken, reduce heat to medium, and continue cooking for another 12-15 minutes until cooked through and the skin is deeply caramelized.
Step 4: While the chicken cooks, prepare your jollof rice if not already made, ensuring it’s warm and the grains are fluffy and well-seasoned.
Step 5: Prepare the fresh salad by combining sliced cucumbers, chopped tomatoes, red onion slices, and bell peppers in a bowl.
Step 6: Drizzle the salad lightly with olive oil, salt, and pepper, then toss gently to combine.
Step 7: Plate your meal by arranging the warm jollof rice on one side, placing the roasted chicken leg on top, and adding the fresh salad on the other side.
Step 8: Serve immediately while the chicken is hot and enjoy your restaurant-quality meal at home.
Storage and Reheating Tips
Store leftover chicken and jollof rice separately in airtight containers in the refrigerator for up to 3 days. Keep the fresh salad in its own container to prevent it from becoming soggy.
To reheat, warm the jollof rice in a skillet with a splash of water over medium heat for 3-4 minutes, stirring occasionally. Reheat the chicken in a 350°F oven for 5-8 minutes until warmed through, keeping it covered to retain moisture.
For best results, prepare the fresh salad just before serving rather than storing it with the other components. This keeps the vegetables crisp and the flavors bright.
