Instructions
Step 1. Preheat a skillet or grill pan over medium heat.
Step 2. Lightly brush both sides of the bread slices with olive oil.
Step 3. Toast the bread until golden brown and crisp on both sides.
Step 4. Spread whipped ricotta or cream cheese evenly over each slice of toast.
Step 5. Arrange the avocado slices in overlapping rows on the first toast.
Step 6. Sprinkle the avocado toast with everything bagel seasoning and red pepper flakes.
Step 7. In a small bowl, toss the cherry tomatoes with olive oil, thyme, salt, and black pepper.
Step 8. Spoon the seasoned tomatoes over the second toast.
Step 9. Heat the butter in a nonstick skillet over medium heat.
Step 10. Crack the egg into the skillet and cook until the whites are set and the yolk remains slightly runny.
Step 11. Season the egg with salt and black pepper.
Step 12. Place the fried egg on the third toast and sprinkle with fresh dill.
Step 13. Arrange all three gourmet toasts on a serving platter.
Step 14. Garnish with additional fresh herbs and serve immediately.
