Instructions
Step 1: Preheat grill or grill pan to medium-high heat. Rub chicken with olive oil and season with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
Step 2: Grill chicken for 6-7 minutes per side, or until cooked through. Remove from grill and let rest 5 minutes before slicing.
Step 3: In a small bowl, whisk together ranch dressing, adobo sauce, and lime juice for the chipotle ranch dressing.
Step 4: In a large bowl or platter, arrange romaine lettuce and top with tomatoes, black beans, corn, bell pepper, red onion, avocado, and shredded cheese.
Step 5: Add sliced chicken on top. Drizzle with chipotle ranch dressing just before serving.
Storage Information
Store components separately in airtight containers in the refrigerator for up to 3 days. Keep dressing in a sealed jar and add to salad just before serving to keep everything fresh and crisp.
