Step 1: Preheat oven to 375°F (190°C). Line an 8×8-inch baking dish with parchment paper or lightly grease.
Step 2: Place the grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Then squeeze out as much moisture as possible using a clean kitchen towel or paper towels.
Step 3: In a large bowl, whisk together eggs, flour, baking powder, garlic powder, and pepper.
Step 4: Stir in the drained zucchini, mozzarella, Parmesan, and parsley. Mix until well combined.
Step 5: Spread the mixture evenly in the prepared baking dish. Bake for 25-30 minutes or until golden brown and set in the center.
Step 6: Let cool slightly before slicing. Serve warm or at room temperature.
Storage Information
Store in an airtight container in the refrigerator for up to 4 days. Reheat in a microwave or toaster oven until warm. Zucchini cheese bread can also be frozen for up to 1 month—wrap tightly in foil and place in a freezer-safe bag.
