step 1 Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
/ n step 2 Heat olive oil in a pan over medium heat and sauté minced garlic until fragrant, then stir into marinara sauce.
/ n step 3 In a bowl, mix ricotta, mozzarella, Parmesan, egg, salt, pepper, and Italian seasoning until well combined.
/ n step 4 Lay zucchini slices flat and spread a spoonful of the ricotta mixture on each slice.
/ n step 5 Roll up each slice and place seam-side down in the baking dish over a layer of sauce.
/ n step 6 Pour remaining marinara sauce over the rolls and top with cherry tomatoes.
/ n step 7 Bake for 25–30 minutes until bubbly and lightly golden.
/ n step 8 Remove from oven and garnish with fresh basil before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through or microwave individual portions. Avoid overcooking to keep the zucchini from becoming too soft.
