Why does mold appear on cheese?

Mold is a form of microscopic fungus that thrives on two things: moisture and a lack of air circulation . In other words, the worst environment for cheese is sealed in plastic wrap in a cold refrigerator. The result: you’re creating the perfect microclimate for fungi, even if your product is still edible.
Some molds are intentionally introduced into certain cheeses, such as Roquefort or Bleu. But outside of these specific cases, the presence of mold is a sign of spoilage : your cheese is beginning to deteriorate.
The foolproof trick: replace plastic wrap with wax paper
The right move :
Wrap your cheese in wax paper (or parchment paper ), not plastic wrap or aluminum foil. This type of paper allows the cheese to breathe : it lets in just enough air to prevent moisture buildup, while also preventing it from drying out .
Then, place it in the least cold part of the refrigerator , such as the vegetable drawer or the cheese compartment. This prevents thermal shock , which promotes condensation.
