Step 1: Preheat your oven to 375°F (190°C) and line a baking dish with foil. /n
Step 2: Pat the pork tenderloin dry and season with salt, pepper, garlic powder, onion powder, and paprika. /n
Step 3: Heat olive oil in a skillet over medium-high heat and sear the pork on all sides until browned. /n
Step 4: Transfer the pork to the prepared baking dish and arrange sliced apples around it. /n
Step 5: In a small saucepan, combine apple juice, brown sugar, Dijon mustard, soy sauce, minced garlic, butter, and cinnamon. Simmer until slightly thickened. /n
Step 6: Pour the glaze over the pork and apples, ensuring everything is well coated. /n
Step 7: Roast in the oven for 25–30 minutes, or until the pork reaches an internal temperature of 145°F (63°C). /n
Step 8: Baste the pork with the glaze halfway through cooking for extra flavor. /n
Step 9: Remove from the oven, let rest for 5 minutes, then slice and serve with the roasted apples and sauce.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the oven at 325°F or in the microwave with a splash of apple juice to keep the meat moist. This dish can also be frozen for up to 2 months; thaw overnight in the refrigerator before reheating.
