Instructions
Step 1. Bring a small saucepan of water to a boil and carefully add the eggs. Cook for 7 minutes for jammy soft-boiled eggs, then transfer them to an ice bath and peel.
Step 2. Toast the bread slices until golden and crisp.
Step 3. In a bowl, mash the avocado with lemon juice, salt, and black pepper until creamy.
Step 4. Spread the mashed avocado evenly over the toasted bread.
Step 5. Slice one soft-boiled egg and arrange it over one avocado toast.
Step 6. Top the second avocado toast with halved cherry tomatoes and feta cheese cubes.
Step 7. Sprinkle both toasts with fresh dill and red pepper flakes.
Step 8. Arrange the cucumber slices, remaining cherry tomatoes, and Kalamata olives on the serving plate.
Step 9. Drizzle olive oil over the vegetables and season lightly with additional salt and pepper if desired.
Step 10. Serve immediately and enjoy.

Store leftover vegetables, olives, and toppings in separate airtight containers in the refrigerator for up to 2 days.
Mashed avocado is best enjoyed fresh but can be stored for up to 1 day with plastic wrap pressed directly onto the surface to reduce browning.
