Instructions
Step 1: Preheat your oven to 400°F. Pat the chicken leg quarters dry with paper towels.
Step 2: In a small bowl, mix together paprika, garlic powder, onion powder, salt, and pepper. Rub the chicken pieces with olive oil, then coat generously with the spice mixture on all sides.
Step 3: Place the seasoned chicken on a baking sheet and bake for 35 to 40 minutes until the internal temperature reaches 165°F and the skin is golden and crispy.
Step 4: While the chicken bakes, bring a pot of salted water to boil and cook the elbow macaroni according to package directions. Drain and set aside.
Step 5: In the same pot, melt 1 tbsp butter over medium heat. Whisk in the flour to create a roux, stirring constantly for about 1 minute.
Step 6: Gradually pour in the milk while whisking to avoid lumps. Cook for 2 to 3 minutes until the sauce thickens slightly.
Step 7: Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
Step 8: Return the cooked macaroni to the pot and fold it into the cheese sauce until well coated.
Step 9: In a small skillet, heat 1 tsp butter over medium heat. Add the green peas and a pinch of salt. Cook for 2 to 3 minutes until heated through, then set aside.
Step 10: If desired, brush the baked chicken with honey or melted butter for a glossy finish during the last few minutes of baking.
Step 11: Plate the baked chicken leg quarter alongside a generous scoop of cheesy mac and a portion of buttered peas. Serve immediately.
Storage and Reheating Tips
Store leftovers in separate airtight containers in the refrigerator for up to 3 days. The chicken, mac and cheese, and peas can all be kept separately to maintain their best textures.
To reheat, place the chicken on a baking sheet and warm in a 325°F oven for about 10 minutes until heated through. Reheat the mac and cheese on the stovetop over low heat with a splash of milk to restore creaminess.
You can also reheat the peas gently in a small pan with a touch of butter. Serve everything warm for the best flavor and texture.
