BBQ Chicken Drumsticks with Herb Potato Wedges and Creamy Coleslaw

Instructions

Step 1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Step 2. In a bowl, whisk together olive oil, barbecue sauce, honey, paprika, garlic powder, onion powder, salt, black pepper, and smoked paprika.

Step 3. Add the chicken drumsticks and toss until evenly coated with the marinade.

Step 4. Arrange the drumsticks on one side of the prepared baking sheet.

Step 5. In a separate bowl, toss the potato wedges with olive oil, garlic powder, parsley, dill, salt, and black pepper.

Step 6. Spread the potato wedges on the other side of the baking sheet in a single layer.

Step 7. Roast for 40–45 minutes, turning the potatoes halfway through cooking, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden brown.

Step 8. During the last 10 minutes of baking, brush the drumsticks with additional barbecue sauce for a glossy finish.

Step 9. While the chicken and potatoes cook, combine the green cabbage, purple cabbage, and shredded carrot in a large bowl.

Step 10. In a separate bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, sugar, salt, and black pepper.

Step 11. Pour the dressing over the cabbage mixture and toss until evenly coated.

Step 12. Refrigerate the coleslaw until ready to serve.

Step 13. Remove the chicken and potatoes from the oven and allow them to rest for 5 minutes.
