Instructions:
Step 1: Preheat your oven to 300°F (150°C). Rub ribs with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 2: Place ribs on a baking sheet lined with foil. Cover with another sheet of foil and bake for 2.5 to 3 hours until tender.
Step 3: Remove foil and brush ribs with BBQ sauce. Broil or grill for 5-10 minutes to caramelize the sauce.
Step 4: Grill or pan-sear sausages over medium heat until browned and fully cooked, about 10-12 minutes.
Step 5: Heat oil in a deep fryer or heavy pan. Fry fresh or frozen fries until golden and crispy. Drain on paper towels and season with salt.
Step 6: For the cheese sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually add milk, whisking until smooth and thickened.
Step 7: Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper.
Step 8: Plate the fries and drizzle generously with warm cheese sauce. Serve alongside BBQ ribs and grilled sausages.

Storage and Reheating Tips:
Store leftovers in separate airtight containers. Reheat ribs and sausages in the oven at 350°F (175°C) until hot. Reheat fries in the oven or air fryer for crispiness. Cheese sauce can be reheated gently on the stovetop with a splash of milk to loosen it up.
