Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Step 2: In a medium bowl, whisk together the flour, baking soda, and salt.
Step 3: In a large bowl, beat the butter, brown sugar, granulated sugar, and Biscoff spread until creamy and smooth.
Step 4: Add the eggs and vanilla extract, mixing until fully combined.
Step 5: Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Step 6: Fold in the crushed Biscoff cookies and white chocolate chips if using.
Step 7: Scoop large portions of dough onto the prepared baking sheets, leaving space between each cookie.
Step 8: Press pieces of Biscoff biscuits gently onto the tops of the cookie dough balls.
Step 9: Bake for 10 to 12 minutes or until the edges are lightly golden and the centers remain soft.
Step 10: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Step 11: Drizzle melted Biscoff spread over the cooled cookies before serving.
Storage and Reheating Tips
Store the cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to 2 months. To reheat, microwave a cookie for 10 to 15 seconds to make it soft and gooey again.
