Instructions
Step 1: In a saucepan over medium heat, combine blueberries, sugar, lemon juice, and vanilla extract. Cook for 8-10 minutes, stirring occasionally, until the blueberries break down and the sauce thickens slightly. Let it cool completely.
Step 2: Soften the vanilla ice cream slightly so it’s easy to scoop and swirl.
Step 3: In tall parfait glasses, add a spoonful of blueberry compote at the bottom. Add a scoop of vanilla ice cream and gently swirl with a spoon to create a marbled effect.
Step 4: Repeat layering blueberry compote and ice cream until the glasses are full. Add blackberries between layers for texture and color contrast.
Step 5: Top with a final scoop of ice cream, a drizzle of compote, and garnish with fresh blueberries.
Storage Information
Serve the parfaits immediately for the best texture. You can freeze prepared parfaits for up to 1 week, but allow them to sit at room temperature for 5-10 minutes before serving to soften slightly.
