Instructions
step 1 Heat oil in a large pan over medium heat. Add the boerewors and brown evenly on all sides, about 5–7 minutes. Remove and set aside.
step 2 In the same pan, add the chopped onion and cook until soft, about 3 minutes. Add garlic and stir for 1 minute.
step 3 Stir in paprika, curry powder (if using), and tomato paste. Cook for 2 minutes to deepen the flavor.
step 4 Return the browned boerewors to the pan, then pour in the baked beans and water or stock.
step 5 Mix well and bring to a simmer. Cover and cook for 10–15 minutes, stirring occasionally, until the sauce thickens.
step 6 Season with salt and pepper to taste.
step 7 Garnish with fresh parsley if desired, and serve hot with pap, rice, or bread.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of water if needed to loosen the sauce. This dish also freezes well for up to a month.
