Step 1: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: In a large bowl, cream together butter and granulated sugar until light and fluffy. Add egg and vanilla extract, mixing well.

Step 3: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until a soft dough forms. Chill dough for 30 minutes.

Step 4: While the dough chills, beat the cream cheese, powdered sugar, and 1 tsp vanilla extract in a small bowl until smooth. Refrigerate until ready to use.

Step 5: Scoop about 2 tablespoons of dough and flatten it in your palm. Add 1 teaspoon of the cream cheese filling in the center, then wrap the dough around it and seal. Place seam-side down on the baking sheet. Repeat with remaining dough.

Step 6: Bake for 12-14 minutes, or until edges are just golden. Let cookies cool completely on a wire rack.

Step 7: Once cooled, spoon or drizzle caramel sauce over the tops. Sprinkle with chocolate chunks and optional chopped nuts.

Storage Information
Store cookies in an airtight container in the refrigerator for up to 5 days. For best flavor, let them sit at room temperature for 10-15 minutes before serving. You can also freeze them (without the caramel topping) for up to 2 months.
