Step 1: Cook the pasta according to package instructions until al dente. Reserve some pasta water, then drain and set aside.

Step 3: Add sliced onions and cook slowly, stirring occasionally, for 20–25 minutes until deeply caramelized and golden brown.

Step 4: Add minced garlic, salt, black pepper, red pepper flakes, and thyme. Cook for 1–2 minutes until fragrant.

Step 5: Add a splash of reserved pasta water to deglaze the pan and loosen the onions.

Step 6: Add the cooked pasta to the skillet and toss to coat in the onion mixture.

Step 7: Add more pasta water as needed to create a light sauce.

Step 8: Stir in Parmesan cheese and mix until creamy and well combined.

Step 9: Garnish with fresh parsley and additional Parmesan before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave with a splash of water or broth to loosen the sauce. This dish is best enjoyed fresh and is not ideal for freezing.
