Instructions
Step 1. Preheat the oven to 375°F (190°C).
Step 2. Toss the chicken drumsticks with olive oil, honey, ketchup, paprika, garlic powder, salt, and black pepper. Place on a baking sheet and roast for 35 to 40 minutes until golden and cooked through.
Step 3. Heat olive oil in a pot over medium heat. Brown the beef cubes on all sides.
Step 4. Add onion and garlic and cook for 2 minutes. Stir in tomato paste, beef broth, thyme, salt, and pepper. Simmer for 1 1/2 to 2 hours until tender.
Step 5. For the rice, combine rice, broth, turmeric, curry powder, peas, carrots, and salt. Bring to a boil, cover, and cook on low heat for 15 to 18 minutes.
Step 6. Cook the macaroni according to package directions and drain.
Step 7. Melt butter in a saucepan, whisk in flour, and cook for 1 minute.
Step 8. Gradually whisk in milk until smooth. Stir in cheese, paprika, and salt until melted.
Step 9. Combine the cheese sauce with the macaroni and transfer to a baking dish. Bake for 20 minutes until golden.
Step 10. Warm the ham slices in the oven during the last 10 minutes of cooking.
Step 11. Heat the baked beans with onions and brown sugar in a saucepan until hot.
Step 12. Sauté the mushrooms, green beans, and roasted potatoes in butter. Season with salt and pepper.
Step 13. Prepare the shredded carrots, coleslaw, beet salad, lettuce, cucumber, and tomatoes.
Step 14. Arrange all components on a large serving platter or individual plates.
Step 15. Serve warm and enjoy this hearty Caribbean-inspired feast.
Storage and Reheating Tips
Store each component separately in airtight containers in the refrigerator for up to 4 days.
Reheat the chicken, beef stew, rice, macaroni and cheese, ham, and vegetables in the microwave or oven until heated through.
Add a splash of broth when reheating rice to prevent it from drying out.
Fresh salads should be stored separately and served cold.
The beef stew, chicken, rice, and macaroni and cheese can be frozen for up to 2 months. Thaw overnight in the refrigerator before reheating.
