Step 1: Preheat oven to 400°F (200°C) and lightly grease a baking dish or line with foil./nStep 2: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, egg, garlic, milk, Italian seasoning, salt, pepper, and parsley./nStep 3: Mix until just combined, being careful not to overwork the mixture./nStep 4: Form into evenly sized meatballs and place them in the prepared dish./nStep 5: Drizzle lightly with olive oil and top each meatball with a small amount of extra mozzarella cheese./nStep 6: Bake for 18–22 minutes or until cooked through and golden on top./nStep 7: For extra browning, broil for 2–3 minutes until cheese is bubbly and slightly crispy./nStep 8: Remove from oven and let rest for a few minutes before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) until warmed through or microwave in short intervals. These meatballs can also be frozen for up to 2 months and reheated directly from frozen.
