Cheesy Baked Rigatoni with Rich Meat Sauce

Instructions

step 1 Preheat oven to 375°F (190°C).
step 2 Cook rigatoni in salted boiling water until just al dente. Drain and set aside.
step 3 In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
step 4 Add ground beef and cook until browned. Drain excess fat.
step 5 Stir in marinara sauce, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 10–15 minutes.
step 6 Combine cooked pasta with meat sauce. If using ricotta, gently fold it in at this stage.
step 7 Transfer half the pasta mixture into a greased 9×13-inch baking dish. Sprinkle with half the mozzarella and Parmesan.
step 8 Layer the remaining pasta on top, followed by the rest of the cheese.
step 9 Cover with foil and bake for 20 minutes. Remove foil and bake uncovered for another 10–15 minutes until cheese is melted and bubbly.
step 10 Let cool slightly, garnish with chopped parsley, and serve.

Storage and Reheating Tips

Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, microwave individual portions or bake in a 350°F (175°C) oven until heated through. This dish also freezes well—wrap tightly and freeze for up to 2 months. Thaw overnight in the fridge before reheating.
