Instructions
Step 1 Preheat oven to 350°F (175°C) and grease a baking dish.
Step 2 In a skillet over medium heat, add olive oil and cook chopped onion until softened.
Step 3 Add garlic and cook for 1 minute until fragrant.
Step 4 Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
Step 5 Stir in salt, pepper, paprika, and dried parsley.
Step 6 Add uncooked rice, beef broth, cream of mushroom soup, and sour cream. Mix well.
Step 7 Transfer the mixture into the prepared baking dish and spread evenly.
Step 8 Cover with foil and bake for 30 minutes.
Step 9 Remove foil, stir gently, and sprinkle cheddar and mozzarella cheese on top.
Step 10 Return to oven uncovered and bake for an additional 10–15 minutes until cheese is melted and bubbly.
Step 11 Garnish with fresh chives and let rest for a few minutes before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave in 1-minute intervals or in the oven at 325°F (160°C) until warmed through. Add a splash of broth or water when reheating to keep it moist.
