Instructions:
Step 1: Season the chicken thighs with salt, pepper, and smoked paprika.
Step 2: Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for 5-6 minutes per side, until golden brown and cooked through. Transfer to a plate and cover to keep warm.
Step 3: In the same skillet, melt butter. Add sliced peaches and cook for 3-4 minutes, until slightly caramelized.
Step 4: Drizzle in honey, lemon juice, and lemon zest. Stir in fresh thyme and let the sauce simmer for 2-3 minutes.
Step 5: Return chicken thighs to the skillet, spoon sauce and peaches over the top, and simmer for another 2 minutes to meld the flavors.
Step 6: Garnish with extra thyme and serve immediately.
Storage Information:
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave. For best results, add a splash of chicken broth or water when reheating to maintain moisture.
