Step 1 Cook noodles according to package instructions, then drain and set aside./nStep 2 Season steak with salt and pepper on both sides./nStep 3 Heat 1 tablespoon vegetable oil in a skillet over high heat and sear steak for 3–4 minutes per side or until desired doneness, then remove and rest./nStep 4 In the same pan, add remaining oil and sauté garlic and sliced onion until fragrant./nStep 5 Stir in chili oil, soy sauce, oyster sauce, brown sugar, and sesame oil, mixing well./nStep 6 Add cooked noodles to the pan and toss until evenly coated in the sauce./nStep 7 In a separate pan, melt butter and fry eggs to your preferred doneness (sunny-side up recommended)./nStep 8 Slice the rested steak into strips.
Step 9 Plate noodles, top with sliced steak, and place a fried egg on top./nStep 10 Garnish with green onions and herbs, then drizzle extra chili oil if desired and serve immediately.
Storage and Reheating Tips
Store noodles and steak separately in airtight containers in the refrigerator for up to 3 days.
Reheat noodles in a pan with a splash of water or oil to loosen the sauce.
Reheat steak gently to avoid overcooking.
Fried eggs are best made fresh, but can be quickly re-fried if needed.
